Concept introduction:

The reaction of carboxylic acid and alcohol in the presence of an acid catalyst produces ester and water as a side product is known as Fischer esterification. The catalyst is used to speed up the reaction. The mechanism of reaction starts with the addition of a proton.

Acetals are formed from alcohol and aldehyde or ketone through nucleophilic addition reaction. The acetal groups act as protecting groups in organic reactions.
